The grapes are 100% Sauvignon Blanc and are manually harvested at the end of February. The vines are between 10 and 12 years old and give a yield of more or less 10 ton/ha. It was fermented for three weeks in stainless steel tanks at 12°C and had no lees contact. The temperature were dropped to -2°C and sparged with CO2 gas under high pressure.
A popular and unmistakable Sauvignon Blanc that is loved for its green herbal flavours and high acidity. The acidity is well balanced which makes it a pleasant and festive wine.
Before serving Merwida Cuvée Brut, ensure it is chilled between 5 - 7°C. A domestic refrigerator is normally around 5°C and by the time the bottle is opened, the serving temperature will be around 8°C. The wine should not be colder than 5°C as the flavour of the wine will not develop. The wine will perform best at an age that is between 1 - 2 years. The more fruit-driven sparkling wines are an ideal pairing with Asian cuisine. Matching canapés for this sparkling wine is fried spring rolls, salty cheeses with crackers or a mini chicken kebab or just an everyday celebration .
It requires a lot of hands-on vineyard work to keep this vigorous Sauvignon Blanc vine from growing out of control (“Sauvignon” means “Wild”).
